From the meeting of two engineers a distillery was born
The project started in 2016 from a common passion for spirits, a dream of creativity and the desire to participate in the development of our region. As entrepreneurs, our value is the creation of quality and distinctive Quebec spirits.
We selected the location of our distillery for one major reason: water, an essential resource for making our products. That from the Mitis River gives us the characteristics sought for fermentation and gives us a product that meets the standards of the thriving fine spirits industry.
In order to create products according to our values and quality standards, we develop partnerships with local companies and organizations specializing in their field. We carefully select our ingredients in order to make our products unique, even atypical.
We perfect each of our production processes and we surround ourselves with the best in order to benefit connoisseurs and non-conformists and to make the Distillerie Mitis experience the most authentic.

My experience as a forest engineer allowed me to discover the richness of flavors contained in natural environments. This is what encourages me to integrate nature into our products.
I'm looking for distinctive flavors. We work hard to discover the best methods to bring out the flavors and subtleties of our ingredients to perfection. The ultimate goal: to produce distinctive spirits and bring the Distillerie Mitis experience to life.
My experience as an electromechanical engineer encourages me to innovate our distillery and think outside the box in order to optimize our production stages.
In recent years, I have had fun visiting several microdistilleries in Canada and the United States and I took the opportunity to chat with the master distillers. In addition to meeting extraordinary people, they inspired and advised me to create "THE" most user-friendly and practical distillery design.
In addition, our fermentation and distillation equipment has been custom-made, according to our specifications, in order to strive for perfection in our distillation process.
Hugo is an assistant distiller, specialist in fermentation. Hugo has extensive experience in the brewing industry. Joining the team in 2021, he supports the team in the creation of products.
