1.5 oz Citrus Mitis Edition Gin
The juice of a quarter of a tangerine
4-5 oz store-bought Tazo grapefruit matcha tea infusion
0.75 oz calamondin syrup (optional)
/ Start by brewing the matcha tea in advance. Infuse two tea bags in 5 oz of boiling water for 2 minutes (you want a much more concentrated infusion than usual). Avoid infusing in a stainless steel container, this causes astringency.
/ Remove the tea bags, extracting as much of the liquid inside as possible and allow the infusion to cool.
/ In a glass filled with ice, add all the ingredients and mix well.
/ Garnish with mandarin slices.
